The Smokin’ Lizzard: Where Smoke, Culture and Family Meet the Flame

For The Smokin’ Lizzard, barbecue has never been simply about what happens on the grill. It is about family gathered around the fire, stories being exchanged, laughter in the background and food creating the kind of memories people carry with them long after the last plate has been served.

That connection to food began early. Some of his first memories involve whole-hog cookouts, experiences that introduced him to barbecue as something much bigger than a meal. Later, while living in Texas, he expanded his knowledge of smoking meats and developed techniques that would eventually become part of his own distinctive approach.

But The Smokin’ Lizzard was never interested in simply duplicating somebody else’s version of barbecue.

His cooking brings together traditional barbecue and Texas smoking techniques with Gullah Geechee and Caribbean influences, creating food rooted in culture while leaving plenty of room for creativity.

“I don’t believe barbecue has to be stuck in one box,” he says. “I want the food to have flavor, personality, and love behind it.”

That philosophy can be tasted across a menu that refuses to be defined by one signature meat. Chicken and ribs may satisfy traditional barbecue lovers, but yellow garden rice, smoked mac and cheese and portobello mushroom sandwiches demonstrate just how versatile cooking over fire can be.

The portobello sandwich, in particular, tends to surprise people.

A Grillmaster may immediately bring images of ribs, chicken, pork and beef to mind, but The Smokin’ Lizzard sees the grill as a much broader canvas. Portobello mushrooms absorb smoke and flavor beautifully, giving him another opportunity to demonstrate that great grilling is less about following expectations and more about understanding what fire can do.

At the center of his flavor profile is something considerably more personal: Lizzard Juice.

The signature sauce was created with his daughter, Jada Caviness Brigman, and Bre in Ridgeville. More than another condiment on the table, Lizzard Juice represents the family connection woven throughout The Smokin’ Lizzard story.

Even the name of the brand carries a piece of his personal history. “Smokin’” reflects his love of smoked meats, while “Lizzard” comes from a college nickname that followed him through the years. Eventually, the two identities came together.

The Smokin’ Lizzard was born.

Respect the Fire

Behind the personality and creativity is a serious respect for technique.

Ask The Smokin’ Lizzard where backyard cooks most often go wrong and his answer begins with something that cannot be purchased at a barbecue supply store: patience.

Rushing the process, failing to prepare before cooking and not understanding fire control can turn a promising cookout into disappointment. His fundamentals are refreshingly uncomplicated: prepare properly, learn to control the fire and give the food the time it deserves.

And there is one additional rule.

Leave the lighter fluid alone.

“You want the flavor coming from your seasoning, your meat, your wood, and your smoke—not lighter fluid.”

Wood selection is another important part of his process. Hickory, oak and cherry remain among his favorites, with each bringing its own character to the food. Knowing those differences is part of understanding barbecue rather than simply following a cooking time.

That knowledge also shapes his definition of a true Grillmaster.

For him, earning that title requires versatility. Knowing how to prepare one cut of meat isn't enough. A Grillmaster should understand fire, smoke, ingredients and different proteins while also being capable of adapting when conditions change.

Yet technical ability is only half of it.

The other half is what happens around the grill.

“I want people around my grill laughing, talking, enjoying themselves, and feeling the love that went into the food.”

That may be the clearest explanation of what separates The Smokin’ Lizzard from someone who simply knows how to barbecue. The finished plate matters, but so does the experience that surrounds it.

Bigger Than the Backyard

Now, The Smokin’ Lizzard is looking beyond the next cook.

One goal is growing his YouTube community to 100,000 subscribers, allowing him to share more of his personality, recipes, techniques and approach to barbecue with audiences beyond those fortunate enough to stand beside his grill.

His larger vision reaches into the food business community as well. He hopes to develop a commissary kitchen where food truck operators can come to prep, creating infrastructure that can serve entrepreneurs while benefiting the surrounding community.

It is a natural evolution for someone whose relationship with food has always centered on bringing people together.

And that may ultimately be the most important ingredient in The Smokin’ Lizzard experience.

There will be smoke. There will be ribs, chicken and mac and cheese. There may be a portobello mushroom on the grill for the person who never expected to find one there. There will certainly be Lizzard Juice.

But there will also be personality.

“If you’re ready to eat, move your feet.”

“It’s liza-rrific.”

“Can you handle it?”

And, in true Smokin’ Lizzard fashion, there is his unmistakable declaration that they are going to “make it do what it do, and after it do, it did, done, dada baby.”

Those phrases capture the fun, but underneath them is something genuine. His ambition is not simply for guests to remember what they ate. He wants them to remember how they felt while eating it.

He wants people to leave with joy.

That is why when the smoke clears, the plates are empty and the grill finally goes cold, The Smokin’ Lizzard leaves people with one final message:

“I love you, and ain’t a darn thing you can do about it.”

For a Grillmaster whose food was built around family, culture, community and love, there may be no better way to say it.

That’s The Smokin’ Lizzard. And that’s what happens when great food goes further than the plate.
